King Fish, also known as king mackerel, is a migratory species of mackerel of the western Atlantic Ocean and Gulf of Mexico. It is an important species to both the commercial and recreational fishing industries. After caught, these mackerel are processed, cleaned, gutted and immediately frozen to maximize the freshness and optimize the texture. Kingfish has a pleasant flavour and only a few large bones. The flesh has a moderate oiliness to it and can be cooked in a variety of ways. Our favorite is to prepare them in foil on the BBQ or bake them to retain their flavour and to keep the fillets moist. Additionally, it provides a huge source of protein, omega-3 and omega-6 fatty acids, vitamins (B12, B6, A, E, and C), and niacin. Additionally, it is a good source of phosphorus, potassium, selenium, and other trace minerals that help to prevent stokes, controls high blood pressure, against Alzheimer’s disease, and support heart health.
IQF stands for Individual Quick Frozen. IQF results in a higher quality product compared to block freezing. It's good for food sustainability, as you can defrost and use the exact needed quantity instead of thawing the whole block.
